Let me call Palappam as queen of appams and her mighty beauty always raise a question in my mind...who is her intimate companion. It is obviously Chicken Mappas.The perfect match for her...
Palappam
Ingredients
1. Soaked White rice- 1 Cup
2. Boiled Rice- 1/4 Cup
3. Grated coconut- 1/4 Cup
4. Yeast - 1/4 tsp
5. Sugar- 4 Tbsp
6. Coconut Milk or Water- 1/2 Cup
Method.
Soak 1 cup of white rice in water for 3to 4 hours. Grind Ingredients 1 to 3. Do not add too much of water because batter should be thick in consistency. Dissolve Yeast and 1 Tbsp of Sugar in 3 tablespoon of water.Then mix it in the batter and allow it to ferment overnight. Before making appams add 3tbsp of sugar, salt to taste and 1/2 cup of coconut milk (Water). Keep it for one hour and after that start making appams. When making appams, keep stirring the batter as frequently as you can and that makes the appams softer.
Chicken Mappas
Ingredients
1. Chicken- 1/2 kg
2. Big Onion (thinly sliced) - 1
3. Ginger Chopped- 2 Inch
4.Green Chilli- 3 Nos.
5.Coriander Powder- 2 Tsp
6. Turmeric Powder- 1/2 Tsp
7. Garam Masala- 1 Tsp
8. Curry Leaves- 1 Spring
9. Thin Coconut Milk- 1.5 Cup
10. Thick Cocunut Milk -3/4 Cup
11. Vinegar- 1/2 Tsp
12.Mustard seed- 1 Tsp
13. Dry Red chillies- 3
Method
Heat a heavy bottomed pan or pressure cooker and add 2 Tbs of Oil. Add onion, ginger, slitted greenchillies and saute it well .When it becomes soft add Ingredients 5 to 7 and saute for two to three minutes. Then it is the time to add chicken pieces and fry it for a while. Then mix thin coconut milk and enough salt into it. Cook the chicken till it becomes soft and fully done.After that add thick coconut milk and do not allow it to boil. Finally season it with mustard seeds, red chillies and some curry leaves fried in little bit of oil.
